Alphabet Chickpea Noodle Soup

So healthy and perfect for a chilly winter day! This soup is fun for the whole family! It's also so delicious and hearty. Perfect for a winter brunch course at home. A base of veggie stock, with carrots, celery, and onion, along with a few spices and the addition of nutritional yeast, which adds savory creaminess.

Ingredients
- 2 carrots, sliced into 1/2 in pieces
- 2 celery stalks, sliced into 1/2 in pieces
- 1 onion, finely chopped
- 2 thyme sprigs
- 2 bay leaves
- 1/4 cup nutritional yeast
- 1/4 cup extra virgin olive oil
- 4 cups vegetable broth
- 1 jar chickpeas with aquafaba
- 4 oz alphabet noodles (La Moderna Alphabets)
- 1/4 tsp turmeric
- 1/4 tsp garlic powder
- 1/4 tsp kosher salt
- salt and pepper to taste
Method
- Heat the evoo in a large pot over medium.
- Add the carrots, celery, onion, nutritional yeast, thyme, bay leaves, garlic powder, salt, and turmeric.
- Stir for 8 minutes and add the broth and chickpeas, and bring to a boil.
- Add the pasta and cook, stirring occasionally, until tender according to the package directions. Remove thyme and bay leaves.
- Serve hot or warm for kids. Enjoy!
