To make this bite-sized appetizer, start by prepping the cauliflower florets and coating them in a simple batter. Air fry or bake until they’re golden and crispy, then toss them in buffalo sauce and return them to the oven for a few more minutes to let the flavor really stick. INGREDIENTS

Buffalo Cauliflower

  • ¼ cup all-purpose flour
  • ¼ cup potato starch
  • ¼ cup nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sea salt
  • ½ cup water
  • 1 head cauliflower, cut into large florets

Buffalo Sauce

  • 2 tablespoons cayenne pepper hot sauce
  • 1 tablespoon agave
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika

Creamy Dip

  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 tablespoon nutritional yeast
  • 2 teaspoons Dijon mustard
  • 2 teaspoons agave
  • 2 teaspoons apple cider vinegar
  • ½ lemon, juiced
  • 1 tablespoon oat milk

METHOD

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, potato starch, nutritional yeast, garlic powder, onion powder, paprika, olive oil, and salt. Add the water and whisk until smooth.
  3. Add the cauliflower florets to the batter and toss until evenly coated.
  4. Spread the cauliflower in a single layer on the prepared baking sheet. Bake for 9 minutes, flip, then bake for another 9 minutes until lightly crispy.
  5. Remove from the oven and toss the cauliflower with the buffalo sauce. Return to the oven and bake for 5 more minutes.
  6. Serve warm alongside carrot and celery sticks with the creamy dip.
