INGREDIENTS
Buffalo Cauliflower
- ¼ cup all-purpose flour
- ¼ cup potato starch
- ¼ cup nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon extra virgin olive oil
- 1 teaspoon sea salt
- ½ cup water
- 1 head cauliflower, cut into large florets
Buffalo Sauce
- 2 tablespoons cayenne pepper hot sauce
- 1 tablespoon agave
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- ½ teaspoon paprika
Creamy Dip
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- 1 tablespoon nutritional yeast
- 2 teaspoons Dijon mustard
- 2 teaspoons agave
- 2 teaspoons apple cider vinegar
- ½ lemon, juiced
- 1 tablespoon oat milk
METHOD
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, potato starch, nutritional yeast, garlic powder, onion powder, paprika, olive oil, and salt. Add the water and whisk until smooth.
- Add the cauliflower florets to the batter and toss until evenly coated.
- Spread the cauliflower in a single layer on the prepared baking sheet. Bake for 9 minutes, flip, then bake for another 9 minutes until lightly crispy.
- Remove from the oven and toss the cauliflower with the buffalo sauce. Return to the oven and bake for 5 more minutes.
- Serve warm alongside carrot and celery sticks with the creamy dip.
