Caesar dressing is one of the recipes that my Mom always makes amazing. It was a staple in my family's house since I was a kid. It is an all time classic favorite dressing that is also versatile.
Homemade Caesar is simply delicious in all kinds of lettuce; kale, romaine, butterhead, or in potato or pasta salad. This weekend I will be using it for my Substack Brunch Menu for Butterhead Caesar, and Penne Pasta Salad.
To make the dressing you need mayo, Parmesan, garlic, lemon salt, pepper and extra virgin olive oil. If you love anchovies, you can add a small amount, which is the classic ingredient. I use capers instead of anchovies to add that salty, briny flavor.
INGREDIENTS
- 1/4 cup extra virgin olive oil
- 1/2 cup mayonnaise
- 1 lemon squeezed
- 1/2 cup grated Parmesan
- 1 tbsp capers
- 1 pressed garlic clove (or 1 tsp garlic powder)
- 1 tsp salt
- 1/2 tsp pepper
METHOD
- Add all ingredients to a mixing bowl and stir well.
- Refrigerate in dressing jar for up to 5 days.

Ingredients
