
Cherry Tomato & Angel Hair

This beautiful angel hair summer pasta recipe, is perfect for a daytime brunch or for dinner. Its simplicity makes it a wonderful option for the whole family. Bright cherry tomatoes pop and the angel hair pasta with salted olive oil is delicate yet satisfying.
INGREDIENTS
- 1/4 cup extra virgin olive oil
- 3 tbsp butter
- 1 lb. cherry tomatoes
- 3 garlic cloves minced
- 1 scallion minced
- 2 garlic scapes minced
- 1 lb. angel hair pasta
- 2 tbsp minced fresh basil
- salt and pepper
- Parmesan for serving
- optional; crushed red pepper flakes
METHOD
- Bring a large pasta pot of salted water to a boil.
- Add olive oil and butter to a large saute pan set to low. Allow the butter to melt and add the tomatoes. Stir gently until they begin to soften for about 5 minutes.
- Add garlic, garlic scapes, and scallion and salt and pepper. Cook for another 5 minutes until the scallion is translucent and all ingredients are gently cooked.
- Add pasta to boiling salted water and cook until al dente (according to your pasta package instruction) about 2 minutes.
- Reserve 1 cup of pasta water and strain the pasta.
- Add the cooked pasta, basil and a bit of the reserved water to the pan with the sauce and cook for 1-2 minutes.
- Serve with flake salt to taste and Parmesan.
