Cherry Tomato & Angel Hair

This beautiful angel hair summer pasta recipe, is perfect for a daytime brunch or for dinner. Its simplicity makes it a wonderful option for the whole family.  Bright cherry tomatoes pop and the angel hair pasta with salted olive oil is delicate yet satisfying. 

INGREDIENTS

  • 1/4 cup extra virgin olive oil
  • 3 tbsp butter
  • 1 lb. cherry tomatoes
  • 3 garlic cloves minced
  • 1 scallion minced
  • 2 garlic scapes minced 
  • 1 lb. angel hair pasta
  • 2 tbsp minced fresh basil
  • salt and pepper 
  • Parmesan for serving
  • optional; crushed red pepper flakes

METHOD

  1. Bring a large pasta pot of salted water to a boil.
  2. Add olive oil and butter to a large saute pan set to low. Allow the butter to melt and add the tomatoes. Stir gently until they begin to soften for about 5 minutes. 
  3. Add garlic, garlic scapes, and scallion and salt and pepper. Cook for another 5 minutes until the scallion is translucent and all ingredients are gently cooked. 
  4. Add pasta to boiling salted water and cook until al dente (according to your pasta package instruction) about 2 minutes.
  5. Reserve 1 cup of pasta water and strain the pasta. 
  6. Add the cooked pasta, basil and a bit of the reserved water to the pan with the sauce and cook for 1-2 minutes.
  7. Serve with flake salt to taste and Parmesan.
