Cold Noodles

This dish is so easy, satisfying and delicious! Also, it's great to enjoy cold noodles on a warm day. Cold noodles are a perfect side dish or the main event.  

I love Hakubaku Ramen or Soba Noodles. This recipe includes healthy ingredients such as cucumber, peanut butter, sesame oil, soy sauce, garlic and ginger. You can either use fresh garlic and ginger or powder.

INGREDIENTS

DISH

  • 1/2 diced Persian cucumber
  • 6 oz. ramen or soba noodles

PEANUT SAUCE

  • 2 tbsp sesame oil
  • 2 tbsp peanut butter 
  • 1.5 tbsp soy sauce
  • 1.5 tbsp agave
  • 1 tsp minced fresh garlic (or .5 tsp garlic powder)
  • 1 tsp minced fresh ginger (or .5 tsp ginger powder)
  • 1 tbsp lime juice

METHOD

  1. Cook your ramen or soba noodles depending on brand, following instruction on package. 
  2. Add all peanut sauce ingredients to a small saucepan and simmer for 5 minutes.
  3. Stir well until the sauce is uniform in color.
  4. Add the warm sauce to the noodles and use a fork and spoon to carefully work the sauce evenly throughout the noodles, using an upward motion, as not to break the noodles. 
  5. Place noodles into a serving bowl, or refrigerator container and chill for 15 minutes. 
  6. Top with fresh diced cucumber before you serve. *Top with extra lime, or lime wedge garnish (optional).
