Crispy Caramelized Onion Stuffing

Simple, delicious stuffing recipe for my Thanksgiving side dish series!
First, we batch caramelized onions on the stove. Next, we add vegetable stock, herbs, and a cubed one-day-old baguette, and bake in the oven until the stuffing is delicately crispy.
Delicious dish paired with sweet cranberry sauce or your favorite savory gravy.

INGREDIENTS
- 1/4 cup of olive oil
- 2 tbsp maple syrup
- 1 tsp kosher salt
- fresh cracked pepper
- 3 sweet onions, diced
- 4 whole garlic cloves, peeled
- 1/2-1 in thin cubed baguette, one-day-old
- 1.5 cups of vegetable broth
- 1/4 cup of chopped fresh herbs (such as sage, rosemary, thyme, Italian parsley)
METHOD PART ONE
- Heat the olive oil in a skillet on medium/low, and then add diced onions, salt, and pepper.
- Let it cook for about 10 minutes and then add maple syrup.
- Stir and let it cook for about 15 more minutes, and add whole garlic cloves.
- Set the stove to simmer and let it cook for 30 minutes longer, stirring occasionally.
- Stir in vegetable broth and fresh herbs, and let it simmer for another 5 minutes.
- Remove from heat and stir in the cubed baguette until each cube is covered in the caramelized onion mixture. The bread should have absorbed all the broth.
METHOD PART TWO
- Preheat the oven to 375°F.
- Place stuffing mixture on a large baking pan, and spread evenly.
- Bake for 20 minutes and carefully remove from oven to stir the stuffing.
- Bake for another 10- 20 minutes, or until gently crispy and browned.
- Remove from oven and serve warm.
- *NOTE: If you make this dish ahead of Thanksgiving, you can make it warm and toasty again with another 10 minutes at 300°F.
