
Frittata Minis

Bite size Frittatas with garlic scapes and/or scallions, spinach and cheese. They are so delicious, and fun too! They taste like they came from a Italian Cafe.
When I see garlic scapes at the market, I have to get some (ramps too!). (I found them at Whole Foods on Sunday ;). They add a delicate garlic flavor to every dish, and they are so fun to cook with!
These mini tulip cupcake (#ad) liners add such a nice touch!
INGREDIENTS
- 1 tbsp extra virgin olive oil
- 1/2 cup of chopped scallions or garlic scapes
- 1 cup chopped spinach
- 1 tbsp torn basil leaves
- 2 oz Monterey jack cheese (I used Rumiano Organic Monterey Jack Cheese Slices)
- 4 eggs
- 1/4 cup milk
- salt and pepper
- grated Parmesan
METHOD
- Preheat the oven to 375F and line a mini muffin tin with parchment liners and brunch with olive oil. (Alternatively, you can just brush tin with olive oil).
- Heat the olive oil on low in a skillet and then add scallions &/or garlic scapes for about 4 minutes, and then add the spinach for 4 more, stirring until the spinach is wilted.
- Drain the greens and then stir in basil, and spoon evenly into bottom of each mini muffin cup.
- In a bowl, stir together eggs, cheese (torn into small pieces), milk, salt and pepper.
- Spoon the mixture carefully over the greens into each muffin cup to the top.
- Sprinkle Parmesan over them, and place in the oven for 12-20 minutes. If you insert a toothpick the middle should be firm.
