Garlic Roasted Fingerlings and Sweets

This Garlic Roasted Fingerling and Sweet Potato recipe is a simple favorite for the whole family. It embraces the flavors of the season and offers a sweet and savory, colorful dish!

Slice potatoes into quarters, stir them with garlic, fresh herbs, spices, and extra virgin olive oil, and roast them to perfection.  You can call them French fries for the kids! These roasted potatoes are a warming side dish you will crave! Perfect to keep in mind for Thanksgiving Sides! 

INGREDIENTS

  • 12 fingerling potatoes (sliced in quarters)
  • 2 small sweet potatoes (sliced in quarters)
  • 1/4 cup of extra virgin olive oil
  • 1 tsp flake salt
  • 1 tsp garlic powder
  • 4 garlic cloves chopped
  • 4 sprigs of rosemary 
  • 4 sprigs of thyme
  • flake salt and pepper to taste

METHOD

  1. Preheat the oven to 400°F and place a baking dish inside to heat up.
  2. Use a large mixing bowl to stir potatoes, evoo, flake salt, garlic powder, garlic, and herb sprigs well.  
  3. With oven mitts, carefully remove the baking dish from the oven and spread the potato mixture evenly across the baking dish. Bake for about 15 minutes until the potatoes begin to brown and are slightly soft. 
  4. With oven mitts, carefully remove the baking dish and flip the potatoes, and bake for another 10- 15 minutes or until slightly brown and crispy on the outside. 
  5. Plate potatoes and remove the dried herb sprigs.
