Creamy Spinach & Cannellini Bean Pasta

This super-healthy green pasta sauce is satisfying and full of nutrients. It’s blended with protein-rich ingredients including spinach, cannellini beans, fresh garlic, and a touch of lemon. Delicious served warm or at room temperature, with an extra squeeze of lemon juice.
INGREDIENTS
- 1 jar (13 oz) cannellini beans, drained and rinsed
- 1 head spinach (about 4 oz)
- 4 garlic cloves, peeled
- ¼ cup water
- 1 tbsp extra virgin olive oil
- juice of ½ lemon
- 2 tsp nutritional yeast (optional)
- 1 tsp kosher salt
- flaky salt and freshly ground black pepper, to taste


METHOD
- Add the spinach, cannellini beans, garlic, kosher salt, olive oil, nutritional yeast (if using), and water to a blender. Blend until completely smooth. If you prefer a thinner sauce, add additional water a little at a time until you reach the desired consistency.
- Store the sauce in the refrigerator until ready to use.
- When ready to serve, gently warm the sauce in a saucepan and toss with just-cooked pasta. Finish with fresh lemon juice, flaky salt, and freshly ground black pepper to taste.
