Creamy Spinach & Cannellini Bean Pasta

This super-healthy green pasta sauce is satisfying and full of nutrients. It’s blended with protein-rich ingredients including spinach, cannellini beans, fresh garlic, and a touch of lemon. Delicious served warm or at room temperature, with an extra squeeze of lemon juice.

INGREDIENTS

  • 1 jar (13 oz) cannellini beans, drained and rinsed
  • 1 head spinach (about 4 oz)
  • 4 garlic cloves, peeled
  • ¼ cup water
  • 1 tbsp extra virgin olive oil
  • juice of ½ lemon
  • 2 tsp nutritional yeast (optional)
  • 1 tsp kosher salt
  • flaky salt and freshly ground black pepper, to taste

METHOD

  1. Add the spinach, cannellini beans, garlic, kosher salt, olive oil, nutritional yeast (if using), and water to a blender. Blend until completely smooth. If you prefer a thinner sauce, add additional water a little at a time until you reach the desired consistency.
  2. Store the sauce in the refrigerator until ready to use.
  3. When ready to serve, gently warm the sauce in a saucepan and toss with just-cooked pasta. Finish with fresh lemon juice, flaky salt, and freshly ground black pepper to taste.
