Grilled Halloumi with Heirloom Tomatoes

This is one of my favorite flavor combinations of all time. Salty cheese, with sweet summer heirloom tomatoes, a lemon squeeze and balsamic fig dressing! For me, the tangy sweet dressing paired with fresh tomato alone is amazing. Adding the salty stringy grilled halloumi just creates a perfect recipe.  Picture perfect too! 

This dish is great for a party because it is so simple to prep as a catered dish. It's also great alongside pizza or pasta night with your family.  

I added a Cast Iron Grill Plate to my kitchen last spring and it has been so fun to make easy grilled recipes on my stove top. Today, I used it to grill the halloumi, and as you can see, you still get those beautiful grill lines.

INGREDIETNS

  • 1 lb halloumi cheese, sliced long into 1/4 in pieces
  • 3 heirloom tomatoes, sliced 1/4 in thick
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh basil leaves (optional to add other herbs of your choice)
  • 1 tbsp fig jam 
  • 1 tbsp balsamic
  • 1 tsp garlic powder
  • 1 lemon slice for garnish

METHOD

  1. Heat grill or cast iron grill plate to medium, and brush with 1 tbsp of olive oil. 
  2. Add halloumi slices once the grill is medium heat.  
  3. Cook each side of halloumi slice for about 3 minutes, or until well charred.  Remove from grill and let cool slightly on a plate. 
  4. Add 1 tbsp of evoo, fig jam, balsamic, and garlic powder to a small bowl and stir well. 
  5. Plate tomato slices, top with grilled halloumi, add herbs and lemon garnish. Then, drizzle with the dressing or serve the dressing on the side.
