Lemon, Garlic, and Olive Hummus

A bright, well-balanced hummus with notes of lemon, garlic, and briny olives. This versatile spread is well suited for crudités, crostini, and appetizers, or as an accompaniment to main dishes. It is particularly good served with roasted vegetables or in sandwiches.

Ingredients

  • 12 ounces chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons green olives
  • 1 tablespoon fresh lemon juice
  • 1/2 small garlic clove
  • 1 teaspoon kosher salt
  • 2 tablespoons filtered water, plus more if needed
  1. Combine the chickpeas, tahini, olive oil, olives, lemon juice, garlic, salt, and water in a blender or food processor.
  2. Process until smooth, stopping to scrape down the sides as necessary.
  3. Add additional water, one tablespoon at a time, and process until the hummus reaches the desired consistency.
