Lemony Tuna


This Lemony Tuna recipe is a great option for a seaside snack. The recipe makes a perfect tuna sandwich to pack up and enjoy at the beach in summer. It is light, bright and refreshing. It's simple to make, offers salty notes from capers and olives, plus crisp baby butterhead lettuce. 

Tonnino Brand is the tuna I have been using at home, usually in their glass jars.  They have a variety of flavors including garlic, jalapeno, and oregano.  

Another way to plate the tuna, if you don't want to use bread is to use the baby butterhead lettuce as cups and make mini lettuce wraps! 

recipe serves 2-4

INGREDIENTS

  • 2 glass jars of Tuna, strained
  • 1 tbsp extra virgin olive oil 
  • 1 lemon juiced
  • 1 tbsp capers
  • 1 tbsp sliced olives
  • 2 stalks of chopped celery
  • 1 tbsp mustard 
  • 1 tbsp mayonnaise
  • baby butterhead lettuce
  • sourdough bread slices
  • onion slices for sandwich
  • 1/2 tsp garlic powder
  • 1/2 tsp flake salt
  • salt and pepper to taste

METHOD

  1. In a mixing bowl stir evoo and lemon into tuna creating a salad texture.  
  2. Add in celery, olives and capers. 
  3. Add in mustard, mayo, garlic powder and flake salt.
  4. Continue to stir all ingredients, until they are evenly spread through.
  5. Add baby butterhead lettuce to the sourdough and top with tuna salad. 
  6. Top tuna salad with sliced onion and another slice of sourdough. 
  7. Wrap with parchment paper and cut in half, for an on-the-go sandwich. 
  8. Alternatively, you can place tuna in butterhead lettuce leaves for lettuce wraps topping with extra sliced olives and onion slices.
