Roasted Sweet Potatoes with Miso Citrus Chickpeas

Golden, caramelized sweet potatoes meet a bright, savory topping in this vibrant plant-based dish. Roasted until tender and naturally sweet, the potatoes are sliced to cradle a zesty mix of chickpeas tossed in a silky miso-citrus dressing. Fresh lime and orange juice add brightness, while scallions and cilantro bring a crisp, herbaceous finish. The result is a balanced combination of sweet, salty, tangy, and umami flavors—hearty enough for a main, but fresh and light on the palate.

Ingredients

  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 2 tbsp extra virgin olive oil 
  • 2 large sweet potatoes, peeled and halved lengthwise
  • 1 tbsp cilantro, chopped
  • 1 scallion, thinly sliced
  • 2 tbsp miso
  • 1 tbsp hot water
  • 1 tsp soy sauce
  • 1 cup chickpeas (cooked or canned, drained)
  • Juice of ½ orange
  • Juice of ½ lime
  • ½ lime, cut into wedges

Method

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the sweet potatoes cut-side down on a cast-iron skillet or baking pan. Drizzle with 1 tablespoon olive oil, then sprinkle with salt and ½ teaspoon garlic powder.
  3. Roast for about 45 minutes, flipping halfway through, until the sweet potatoes are deeply caramelized and fork-tender.
  4. Meanwhile, in a mixing bowl, whisk together the miso, 1 tablespoon olive oil, the remaining ½ teaspoon garlic powder, and hot water until smooth and well combined.
  5. Add the chickpeas, orange juice, lime juice, soy sauce, scallion, and cilantro. Toss until everything is evenly coated.
  6. While the sweet potatoes are still warm, slice each half into sections without cutting all the way through, creating space for the topping.
  7. Spoon the miso-citrus chickpea mixture generously over each sweet potato half.
  8. Garnish with lime wedges and serve immediately.
