Ingredients
- 1 tsp garlic powder
- 1 tsp kosher salt
- 2 tbsp extra virgin olive oil
- 2 large sweet potatoes, peeled and halved lengthwise
- 1 tbsp cilantro, chopped
- 1 scallion, thinly sliced
- 2 tbsp miso
- 1 tbsp hot water
- 1 tsp soy sauce
- 1 cup chickpeas (cooked or canned, drained)
- Juice of ½ orange
- Juice of ½ lime
- ½ lime, cut into wedges
Method
- Preheat the oven to 400°F (200°C).
- Arrange the sweet potatoes cut-side down on a cast-iron skillet or baking pan. Drizzle with 1 tablespoon olive oil, then sprinkle with salt and ½ teaspoon garlic powder.
- Roast for about 45 minutes, flipping halfway through, until the sweet potatoes are deeply caramelized and fork-tender.
- Meanwhile, in a mixing bowl, whisk together the miso, 1 tablespoon olive oil, the remaining ½ teaspoon garlic powder, and hot water until smooth and well combined.
- Add the chickpeas, orange juice, lime juice, soy sauce, scallion, and cilantro. Toss until everything is evenly coated.
- While the sweet potatoes are still warm, slice each half into sections without cutting all the way through, creating space for the topping.
- Spoon the miso-citrus chickpea mixture generously over each sweet potato half.
- Garnish with lime wedges and serve immediately.
