INGREDIENTS
- 1 cup roasted sweet potato (roasted at 350°F for 1 hour, flesh only)
- ½ cup semi-sweet chocolate (chips or chopped)
- ¾ cup almond milk
- 1 tablespoon roughly chopped almonds, for topping
METHOD
- In a small saucepan, combine the sweet potato, chocolate, and almond milk.
- Place over low heat and stir continuously for about 5 minutes, until the mixture is smooth and uniform.
- Remove from heat and pour into a freezer-safe container or shallow tray.
- Freeze for 45 minutes, until chilled and softly set.

STORAGE
Store covered in the refrigerator for up to 3 days. For a firmer texture, keep frozen and allow to sit in the refrigerator for 20 minutes before serving.
