INGREDIENTS

  • 1 cup roasted sweet potato (roasted at 350°F for 1 hour, flesh only)
  • ½ cup semi-sweet chocolate (chips or chopped)
  • ¾ cup almond milk
  • 1 tablespoon roughly chopped almonds, for topping

METHOD

  1. In a small saucepan, combine the sweet potato, chocolate, and almond milk.
  2. Place over low heat and stir continuously for about 5 minutes, until the mixture is smooth and uniform.
  3. Remove from heat and pour into a freezer-safe container or shallow tray.
  4. Freeze for 45 minutes, until chilled and softly set.
  5. Scoop to serve and finish with chopped almonds.

STORAGE

Store covered in the refrigerator for up to 3 days. For a firmer texture, keep frozen and allow to sit in the refrigerator for 20 minutes before serving.
