Tuna- Cannellini Roll

Looking forward to the Fourth of July Weekend, I am planning an All American Weekend Brunch!

My festive, easy to prep in advance, recipes include this Tuna- Cannellini Roll (inspired by an Ina Garten lobster roll recipe), Classic Potato Salad, as well as a Ginger-Basil Grapefruit Soda Pop.  Also, a super simple desert inspired by Magnolia Bakery's Banana Pudding.

This Tuna- Cannellini (Tunini?) Roll is made with a few jars of yellowfin tuna in olive oil, organic cannellini beans, celery, herbs, and lemon juice.  It's a refreshing twist on traditional tuna salad.

In between the lightly grilled brioche bun and the tuna is a piece of Gotham Greens (adorable Oscar the Grouch themed) butterhead lettuce. I am absolutely loving this Gotham Greens Sesame Street line of lettuce inspiring young chefs! The cutest!

Now back to our "Sunny Days" Recipe: 

INGREDIENTS

TUNA- CANNELLINI 

  • 2 jars (6.7oz. each) of Tonnino tuna (or your choice of tuna jar)
  • 1 jar (13 oz.) of Jovial cannellini beans (or your choice of white bean)
  • juice from 1 lemon
  • 1 tsp chopped dill
  • 1 tsp chopped Italian parsley
  • 1 large piece of celery diced small
  • salt and pepper
  • mayo is optional

BUTTERHEAD & BUNS

  • 4 brioche buns
  • 4 large pieces of butterhead lettuce
  • 4 slices of lemon for garnish

METHOD

  1. Drain the olive oil from the tuna jars and add tuna to mixing bowl.
  2. Drain the water from the cannellini beans and add beans to mixing bowl.
  3. Add the lemon juice and mash these ingredients together until most of the cannellini beans are mashed with the tuna.  
  4. Store this mixture in the refrigerator until ready to serve. 
  5. Before you are ready to serve, add the dill, parsley, celery, salt and pepper and stir well. (you can also do this ahead of time but I like it to be fresh and crunchy). 
  6. Using a skillet, add olive oil and lightly grill both sides of the buns. 
  7. Add a large piece of fresh butterhead lettuce to each bun and then top with the tuna- cannellini mix. Garnish with a lemon. *It's optional to add mayo to this recipe, in the mix or offered as a condiment on the side.
