
Watermelon- Tomato Salad

One of my favorite summer treats is watermelon salad with tomato, herbs and cheese. This salad tastes like summer and is satisfying and light at the same time. It's one of those balanced combinations of sweet and salty that just hits the spot on a warm summer day. I like to add a spoonful of salsa to the dressing for an extra kick of flavor.
Many watermelon- tomato salads use feta for the cheese of choice, which is delicious, however I chose one of my favorite selections for this recipe... Meredith Dairy's Farmstead Marinated Sheep and Goat Cheese. I always choose vegetarian cheeses (which means it's made with non animal rennet) and this one is one of my favorites.
So let's slice some fresh summer watermelon...
recipe serves 4
INGREDIENTS
- 1/2 medium watermelon
- 2 large heirloom tomatoes
- 1 teaspoon chopped Italian parsley (optional)
- 1 teaspoon chopped dill (optional)
- 1 teaspoon chopped basil (optional)
- 2 tablespoon extra virgin olive oil
- 1 teaspoon mild salsa
- 1/2 of a lemon juiced
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- crumble a piece of Meredith dairy farmstead sheep & goat cheese per bowl at time of serving
METHOD
- Slice watermelon into 1 in. cubes.
- Slice tomato into 1/2-1 in. pieces
- Add watermelon and tomato into mixing bowl with herbs of choice and stir.
- In a small salad dressing jar add olive oil, salsa, lemon juice, garlic powder and salt and shake or stir well.
- Pour dressing over salad and store in refrigerator until ready to serve.
- At time of serving, fill a serving bowl and then crumble one square of cheese over salad per serving.
