White Bean Soup

This White Bean Soup is a perfect warm and cozy apres-ski dish! Creamy white beans, with veggies and herbs fill this nourishing, flavorful soup! 

Easy to prepare, and can be batched for meal prep ahead of time. With some time in the refrigerator, the flavors come together even better! 

Serve it with a side of crusty bread! 

White Bean Soup Ingredients

  • White Beans such as butter beans or a jar of cannellini beans. They are so healthy, creamy and delicious. 
  • Vegetable Broth Store-bought or home- prepped vegetable broth from the freezer. 
  • Extra- Virgin Olive Oil for richness and body. 
  • Kosher Salt to enhance the flavors while cooking.
  • Celery, Sweet Onion & Garlic add a delicious base of flavor to the soup. 
  • Nutritional Yeast for creaminess and umami. 
  • Rosemary and Thyme help bring out the depth of flavors. 
  • Fresh Lemon Juice for acidity and brightness.
  • Salt and Pepper to taste will help the flavors shine! 

First, saute the celery, onion, and garlic in extra- virgin olive oil. Cook for 6 minutes. Next, add the beans, garlic, herbs, nutritional yeast, and broth, and simmer the soup for 20 minutes. Finish the soup with lemon juice, and add salt and pepper to taste.

INGREDIENTS:

  • 2 tbsp extra virgin olive oil
  • 1/2 medium onion, chopped
  • 4 celery ribs chopped
  • 2 garlic cloves peeled 
  • 1 sprig of fresh rosemary 
  • 1 sprig of fresh thyme
  • 1 cup nutritional yeast
  • 4 cups vegetable broth 
  • 3 cups white beans, butter beans, or cannnellini beans 
  • 1 tsp kosher salt
  • 1 tbsp fresh lemon juice
  • flake salt and fresh cracked pepper to taste 

METHOD:

  1. Heat the olive oil in a large pot over medium/low heat and add the celery and onion. Cook, stirring occasionally, for 6 minutes. 
  2. Add the broth, garlic cloves, rosemary, thyme, salt, nutritional yeast, beans, and stir. Simmer for 20 minutes. 
  3. Add lemon juice, plus salt and pepper to taste.
  4. Store in the refrigerator for up to 4 days. When it's time to enjoy, reheat on the stove, serve warm, and savor!
